Sushi

Light and healthy snack straight from Japan

  1. Pay attention while shopping. Choose only best quality ingredients. Especially the fish - it needs to be really fresh. Try to find a good fish shop in your neighborhood and avoid buying fish at the supermarket.

  2. Prepare the vinegar. Mix together the rice vinegar, sugar and a pinch of salt in a saucepan. Cook over medium heat until sugar has dissolved. Avoid boiling.

  3. Prepare the rice. Rinse the rice thoroughly. Place the rice and the water in a medium saucepan and bring it to boil. Reduce the heat to simmer and cook until done and sticky (it should take around 20 min). Pour the vinegar sauce over the hot rice and mix. Set aside to cool. If you make sushi with hot rice the nori will become chewy.

  4. Prepare other ingredients. All ingredients need to be cut in small thin pieces and well dried with a paper towel.

  5. Roll the sushi. Prepare small bowl of water for your spoon and fingers (if the rice is too sticky). Place one sheet of nori seaweed on a bamboo mat and gently cover with rice - leave one centimeter of the seaweed at the top. The rice layer shouldn't be too thick. With your fingers put a bit of water on the part of nori that is not covered with rice. Arrange your favorite ingredients length-ways at the bottom edge of rice. Roll the sushi with the mat.

  6. Serve the sushi. Cut the roll into small one-bite pieces with a sharp knife and arrange them nicely on a plate. Serve accompanied with soya sauce, wasabi and marinated ginger.
